#TASTEOFTHURSDAY Quinoa Salad recipe

Quinoa salad, mango, avocado, roasted red pepper, red onion, cilantro and jalapeño huacatay dressing.



1 cup quinoa

1/2 white onion finely diced

2 garlic cloves finely diced

1 teaspoon ground turmeric powder

1 teaspoon ground cumin

Salt to taste.

1/2 bunch cilantro finely diced

1/2 cup fresh mint finely diced

1 roasted red pepper finely diced

2 jalapeños finely diced

1/2 red onion finely diced.

1 mango diced in chunks

1 avocado diced in chunks

Huacatay jalapeño dressing:

Method for dressing:

2 tablespoons huacatay paste

1 bunch of mint, stems removed.

2 cloves garlic finely diced.

1 jalapeño rough chopped

1 teaspoon ground cumin

1 juice of one lime

Splash of honey (about 2 tablespoons)

1 cup olive oil.

Salt to taste 


In blender add garlic, mint, huacatay paste, mint, cumin, lime juice. Purée until fully blended. Add honey. Then slowly add olive oil until thickened. Finish with salt to taste.

Method for salad:

Sauté in small pot onions and garlic in a teaspoon of olive oil. Add turmeric and cumin. Cook for a min then add quinoa and sweat another min. Add enough water to cover quinoa and cook for about 15 to 20 mins. Until grain starts to unfurl. Cool and set aside. When cool add cilantro, mint, jalapeño, red pepper and red onion. When serving toss salad with a bit of dressing. In mold add quinoa salad, mango and avocado and more salad. Top with mango and fresh mint. Dressing around mold.
