Plenty to Fall for at Burdock & Co this Season

Main Street eatery celebrates seasonal menus,
Hall of Fame honour and new sommelier

Fall is in the air, cooler weather and changing leaves have ushered in a fresh crop of seasonal ingredients to the kitchen at Burdock & Co. The cozy eatery celebrates the turn of the seasons with inventive new dishes perfect for family-style feasts. But that’s not all: the restaurant is particularly festive thanks to Executive Chef Andrea Carlson’s recent induction into the B.C. Restaurant Hall of Fame, as well as the appointment of new Sommelier Claire Saksun and the continuation of ’70s-inspired Disco Dumplings happy hour and weekend brunch.

Morel mushrooms, cauliflower, fennel and potatoes – fall’s cornucopia makes for menu items bursting with bold flavours and textures. Chef Andrea and her team have crafted poetic dishes that read like an ode to the new season: roasted radishes with smoked cayenne koji and garlic; shaved fennel salad with nasturtium flower ice and fennel flowers; and grilled radicchio with prosciutto, pecorino, black garlic crumb and mint – and that’s just to start. Indecisive diners, fear not: Burdock & Co’s family-style sharing menu ($65 per guest) is perfect for sampling an array of flavours.

“I love the changing of the seasons, and fall just might be my favourite time of year for new produce,” said Chef Andrea. “There are so many incredible flavours, textures, colours and aromas to play with. Our fall dishes are a sensorial journey, and I’m excited to share these adventurous flavour combinations with our guests.”

Chef Andrea was recently honoured as the newest inductee into the prestigious B.C. Restaurant Hall of Fame, which recognizes her as a ‘Local Champion’ for her support of farm-to-table food and drink. Chef has been lauded for creating a special experience at Burdock & Co which prioritizes ingredients sourced from a trusted network of local farmers, growers and vintners, and celebrates pride of place through every dish. Chef received her award at the Hall of Fame’s black-tie gala, which took place in Vancouver on October 1.

The celebrations continue with Claire Saksun joining the team as Burdock & Co’s new wine director. Formerly the wine director at celebrated restaurant Royal Dinette, Claire fell in love with Chef Andrea’s philosophy of forging relationships with family farmers and winemakers, and the restaurant’s focus on organic low-intervention wines. Now firmly entrenched in her new role, Claire takes pride in curating a natural wine list that supports Burdock & Co’s farm-to-table ethos and encourages guests to experience the myriad delights of natural wines.

Burdock & Co’s ever-popular Disco Dumplings happy hour continues every Monday at 8:00pm. Throughout the evening, local DJs spin vinyls while an evolving menu showcases local beers and wines at a discounted price.

A team of leading ladies will be at the helm of Disco Dumplings this Monday, October 29. Burdock & Co will be showcasing wines produced by some of the world’s most talented female winemakers and viticulturalists, including Elisabetta Foradori, Marie Courtin, Elena Pantaleoni, and Anne Paillet.
