2017 Seven Stars Polaris
Polaris is the basis for our sparkling program, guiding the other members of the Seven Stars family. The Seven Stars series of sparkling wines are crafted in the traditional “Méthode Champenoise” style in which the wine undergoes a secondary fermentation in the bottle. This vintage of Polaris Seven Stars bursts with Granny Smith apple, peach and lime aromas along with freshly baked bread, creating a complex and pleasing nose. The mouthfeel is rich and luxurious with a toasty, creamy mousse, which ends with a refreshingly crisp and clean finish. An opulent, full-bodied sparkler, Polaris is ideal for celebrations as well as sipping. Enjoy with oysters, hors d’oeuvres, or try with a creamy blue cheese.
This classic blend of Cabernet Sauvignon and Merlot has aromas of cassis, dark cherry, cocoa and flint. The palate displays rich black currant up front, finishing with caramel and firm tannins. Decant before serving to release aromatics and soften palate as wine is unfiltered.
A Merlot based Bordeaux blend, this vintage has exuberant black cherry, raspberry, plum, eucalyptus, and lavender aromas. A well structured and attractive palate displays black currants, cocoa, cedar box and vanilla characteristics. Try our Right Bank style Bordeaux blend with a char grilled flank steak or a tomato and olive tapenade.
2016 Vintage – LA International Wine Competition 2019
This Cabernet Sauvignon is full of aromas of black currant and dark cherry tempered with tobacco and graphite. The blend of terroirs delivers a wine of complexity with a hint of minerality on the palate. The soft tannins and ripe fruit pair perfectly with grilled venison and roasted potatoes.
This Merlot is supple with red cherry and ripe plum tempered with spicy aromas of tobacco leaves, cocoa and vanilla. The combination of terroirs adds complexity along with barrel aging to soften tannins. Perfect to pair with a medium rare, Alberta Beef Prime Rib served with a demi glaze and roasted potatoes.
“Pristine, floral, fragrant. An estate blend of Pinot Gris, Gewurztraminer, Viognier, Riesling and Muscat this ambrosial white is perfumed with tangerine, honeysuckle, peaches, lemon/lime and green apple. The palate is as pristine as the nose; floral and fruity with crunchy fruit and a kiss of sweetness. A pretty wine, lengthy and balanced.” Listed in the Top 100 wines of 2019 – WineDiva, Daenna Van Mulligen
This vintage of Pinot Gris has vibrant aromas of pear and apricot. A crisp and refreshing palate follows with flavours of granny smith apple and key lime with a flinty, mineral finish. A versatile wine that can be served with a variety of foods, including grilled fish or oven roasted chicken.
