Pacific Northwest-Focused Restaurant Offers 30% off for Guests During Opening Weekend of September 18-20 off to Celebrate Grand Opening

 

Pacific Northwest cuisine will be elevated to new heights when Hyatt Regency Vancouver officially welcomes guests to its new Cloudstreet Restaurant in the heart of Downtown Vancouver at 655 Burrard St. and offers 30% off during its grand opening weekend beginning Friday, Sept. 18.

 

Open daily for breakfast, lunch and dinner service, Cloudstreet brings a renewed focus on Pacific Northwest flavours and ingredients to bear in a menu inspired by seasonality, local providers and a lighter, more expressive approach to hotel dining.

 

The Cloudstreet kitchen is led by Chef de Cuisine Craig Sung, who began his culinary journey in Vancouver and honed his skills alongside Michelin-starred chefs in hotel kitchens in Vancouver and Australia. Most recently Sung was the Executive Chef at former acclaimed West End favourite Forage at the Listel Hotel, where he continued to perfect his sustainably sourced and locavore-focused approach to Pacific Northwest cuisine.

 

Sung’s fall and winter menu includes a variety of small plates, shareables, soups, salads, mains anCd more that are all inspired by the quiet beauty of the region as the seasons turn, and the local providers who bring the very best of BC’s bounty to his kitchen daily.

 

“Our menu pays homage to the rich forests, rugged coastlines, crisp mountain air and region’s harvests and is a celebration of local at its most comforting, vibrant, and expressive,” says Sung. “We proudly work with exceptional farmers, fishers, foragers and artisan producers to source the finest seasonal ingredients with a deep respect for sustainability, craftsmanship, and sense of place. Every dish reflects the warmth and generosity of the season, layered with bold flavours, refined techniques, and a contemporary West Coast perspective.”

 

Some of the highlights of Sung’s Menu:

 

Small Plates, Shareables and Soups
  • Bison Carpaccio (sunchoke cream, tamari egg yolk, pickled shallots, baby arugula, sherry vinaigrette, focaccia crisp);
  • Braised Beef Croquette (12-hour braised beef cheek, smoked onion aioli, pickled mustard seeds, red wine jus);
  • PEI Mussels (Prince Edward Island mussels, Thai curry broth, crispy shallots, lime, grilled sourdough);
  • Seafood Chowder (BC salmon, halibut, mussels, Yukon potatoes, herbs, white wine cream, grilled sourdough);
  • Wild Mushroom Velouté (roasted seasonal mushrooms, chives, herb oil, grilled sourdough).
Cloudstreet Classics and Salads
  • Farmcrest Chicken Sandwich (grilled chicken breast, aged Provolone, tomato-chili relish, arugula, pickled onions, roasted garlic aioli, toasted ciabatta, optional add avocado, fried egg or bacon);
  • West Coast Halibut & Chips (house fries, house tartar sauce, dill-cucumber salad, charred lemon);
  • Cloudstreet Signature Burger (8oz house blend burger grind, aged cheddar, caramelized onions, crisp lettuce, heirloom tomato, truffle aioli, brioche bun, optional add wild mushroom, fried egg or bacon);
  • Winter Greens Salad (baby kale, radicchio, BC ambrosia apple, roasted squash, toasted pumpkin seeds, pomegranate, goat cheese, Champagne vinaigrette. Optional add chicken, tiger prawns or BC salmon);
  • Tuna Niçoise Salad (seared Albacore tuna, baby gem, roasted baby potatoes, haricots verts, cage-free egg, Niçoise olives, pickled shallot, Dijon-lemon vinaigrette).
Main Plates
  • Herb-Roasted Chicken Breast (roasted garlic pommes purée, heirloom carrots, seasonal greens, thyme jus);
  • Bison Pappardelle (San Marzano bison ragù, Pecorino Romano, parsley, rosemary-chili pangrattato);
  • Harvest Bowl (crispy tofu, roasted squash, grilled bok choy, broccolini, pickled daikon, quinoa, sesame-ginger dressing);
  • Roasted BC Steelhead (herb-crusted potato, charred bok choy, shaved fennel & apple slaw, miso beurre blanc);
  • Field & Garden Gnocchi (butternut squash, Pecorino Romano, brown butter crumb, crispy sage, pumpkin seed gremolata).
Sweet Plates
  • Wood-Fired BC Apple Tart (cinnamon-roasted BC Ambrosia apple, yogurt ice cream, salted caramel, oat streusel);
  • Sticky Toffee Pudding (warm date sponge, 40 Creek whisky toffee, vanilla bean ice cream, maple pecans);
  • Chocolate Ganache Bar (chocolate crunch, blood orange, crème Anglaise).

 

In terms of ambiance, Cloudstreet’s dramatically redesigned interior embraces natural light with floor-to-ceiling windows and a contemporary West Coast design scheme that showcases warm finishes, modern furnishings in an expansive-yet-intimate space ideal for morning meetings and business lunches to dinner service and evening cocktails.
