pair well with some inspirational recipes”

The wines from Winemaker’s Cut were so delicious I enjoyed them over a few days and of course had to pair them with a dish that made the perfect pairing.

One thing you should know about me, I’m not a big vegetable fan and I am not too keen on broccoli but this Broccoli Caesar has turned me into a convert.

Not the easiest dish to pair but the fresh citrus notes of the Winemaker’s Cut Sauvignon Blanc was just the perfect pairing.

Winemaker’s Cut Sauvignon Blanc 2024

CRAFTED IN BC

This tropical crisp Sauvignon Blanc is a refreshing and vibrant wine. On the nose, you’ll be greeted with aromas of ripe tropical fruits such as pineapple, mango, and passionfruit, along with hints of citrus zest and fresh herbs. The palate is bright and zesty, with flavors of juicy grapefruit, guava, and a touch of green apple. The acidity is crisp and refreshing, making this wine perfect for pairing with seafood dishes, salads, or simply enjoying on its own.

On the nose some pineapple and stone fruit mingling into a tropical scent. The wine is lively, crisp and fresh with flavours of citrus and a lingering finish.

A word of caution here. Temperature can make a big difference in how you interpret the aromas and flavours of a wine, and in particular, this wine. Initially when I tasted the wine it had just come from the refrigerator. This subdued the otherwise delicious notes. After a short while the wine opened up and exhibited more pronounced scents of floral, enhanced acidity and more flavour. 

The wine is delicious with a bit of spice and peach notes with a lingering finish. 

Broccoli Caesar

1 very large  broccoli crown
1 garlic clove, minced
½ baguette
1/2 cup grated Parmesan, divided
olive oil, divided
capers
white wine vinegar
balsamic glaze
1 tsp Dijon mustard
1 can of white beans, such as cannellini, drained and shaken dry

Combine the garlic, half the parmesan, capers and half the olive oil in a large bowl. Add the broccoli tossing to coat with the mixture.

Roast at 425 degrees for about 15 minutes depending how large your broccoli pieces are.

Break up the baguette into cruton size pieces and toss in the bowl, adding more olive oil is needed.

Make the dressing using half the olive oil, half the parmesan, a few shakes of white wine vinegar, Dijon mustard and the balsamic glaze. Adjust ingredients to your liking, more balsamic glaze for sweetness or more white wine vinegar for tartness and tang. If you prefer a more traditional Caesar dressing substitute the white wine vinegar and balsamic glaze for freshly squeezed lemon juice.

After the first 15 minutes remove the broccoli crowns from the oven and roast for ten more minutes. Remove the broccoli crowns again and add the beans and crutons, mix everything and roast for about 5 minutes more or until the beans are warmed through. You may turn off your oven for this final 5 minutes if you wish.

Return everything to the mixing bowl, or divide between serving dishes, and add in the dressing.

This recipe is supposed to be a salad but it also makes an incredible hot dish. You can serve it either way. With or without additional baguette.
