Wine Recommendation Taste of Thursday
Local boy, Chef Paul Moran has contributed the recipe for this week’s Taste of Thursday. Chef Paul, 2013 winner of the first annual Hawksworth Young Chef Scholarship award, has traveled the world honing his culinary chops and has racked up an impressive list of awards.
With this dish, I think you’d be pretty safe with any of your favourite red wines. Perhaps an Italian vino rosso, a northern Rhone vin rouge or a Spanish vino tinto. However, the wine that immediately popped into my mind was Stone Boat’s Pinot Noir. The aroma and flavours of cherries, earth, spice and meat should hit all the right notes in this dish, from the pigeon to the beets.
