TIME 2018 Sauvignon Blanc

Tropical citrus and gentle oak aromas, balanced by a creamy mouthfeel and a bright, citrusy finish. Barrel fermented for added texture and complexity.

Silver Barrel Vineyard (Okanagan Falls)

WINEMAKING
Stainless fermented, then barrel-aged for 2 months in French oak.

TASTING NOTES
Classic aromas circle in the glass: honeydew melon, pear, and a hint of tangerine. Taste hints of apricot and mango swirled with ripe gooseberry. This wine is mellowed by barrel aging, resulting in a sturdy and vibrant finish with delicate traces of oak.

Hints of Meyer lemon with good acidity. Crisp and fruity. The Sauvignon Blanc makes an enjoyable stand-alone sipper, yet also lends itself well with pairings such as mild cheeses, and more delicate dishes with cream sauces or with white fish, or sockeye salmon. Think pairing with BBQ fare.

A definite winner on the patio in summer, and just as at home in front of the fireplace accompanied by savoury snacks and a good Netflix movie.

I had occasion to pair the Time Sauvignon Blanc with an Asian dish of Dumpling Soup with Noodles. That dish is fast becoming a family favourite because you can easily adjust the recipe for a crowd. Recipe #ThisWineThatDish previously paired with a Chardonnay, I also enjoyed the soup equally well with the Time Sauvignon Blanc.
