Mark Singson

November 6th & 7th

Mark Singson’s enterprise, FAM Inc., was created from three pillars that inspire everything he does – Food, Art, & Music. Growing up in Vancouver, Mark has been able to explore these three pillars, all of which have had a large influence on the culinary creations for which he is celebrated.

At the beginning of his career, Mark had the privilege of working at some well-known Vancouver hot spots such as The Fairmont Pacific Room, Oakwood and Boneta. Mark then travelled to Melbourne, Australia, where he worked at Vue De Monde and Saint Crispin before hosting the first of his many successful FAM pop-up dinners.

Mark has a Michelin ladened resume, with the opening of the acclaimed AnnaLena at the top of the list.

Over the last few years, Mark has more & more embraced his Filipino roots, inspiring many of his original creations and helping put a new twist on traditional dishes.

Wesley Young

November 13th & 14th

Wesley Young may not be a household name, but ask anyone in the industry in Vancouver & you will understand the regard his peers hold him in.

Born and bred in East Vancouver, Wesley completed his culinary training at Malaspina University and Vancouver Community College. Wesley came late into the cooking scene (mid-20s) but hit the ground running, working for Four seasons in Vancouver.

In 2005, Wesley moved to London and joined the critically acclaimed Tom Aikens. For about the past five years, Wesley has been at PiDGiN restaurant, which just made its way into the Michelin guide. PiDGiN explores how various Asian cultures meld in a foreign city & the food that comes from that.

Matthew Deacon-Evans

November 20th & 21st

For the second time, the Deacon-Evans brothers will be going head to head at Naramata Inn! A rematch 14 years in the making.

Other than being Chef Jacob’s brother, Matthew is a very talented Chef himself (and may have been Chef Jacob’s inspiration to get into the industry). For nearly 10 years, Matthew owned the Penticton institution, Pepper Club. Most recently, he has stepped away from running 21 restaurants around Canada & the US to start some exciting new projects which are not quite ready to be declared to the world yet.
