Reflections Where Everything Old Is New Again

The re-designed Reflections The Garden Terrace in the Rosewood Hotel Georgia has quickly become the place to be in Vancouver. A spacious lounge featuring comfort and simplicity in an elegant fashion. The room is spacious as well as luxurious with comfy banquette seating dispersed about the ample space.

On a recent visit we took note of the homey touch such as wooden shelving featuring beautiful pieces of pottery that both adorn and give the space its feeling of tranquility and comfort. I love to sit back and relax in banquette seating and I couldn’t help but notice that was the most popular seating in the space.

Filled with quiet, intimate corners there is also an airy feeling throughout with sections of high backs and curves that allow the space to be more private, and most importantly, quieter. We were seated not far from a group of about eight people but because of the layout, which includes some open spaces, room dividers and landscaped areas, we still felt cocooned and separated from the other guests.

With contemporary music playing in the background we were able to relax and enjoy the moment. We were there in between the afterwork crowd and before the later guests would arrive.

I was escpecially intrigued by the massive glass roof that curves upward giving a panoramic view of the towering buildings and the skies above. Although not on this night, the glass ceiling does open and I can’t wait to go back on a sunny afternoon or evening to experience having the outdoors brought inside.

One of the first things that really impressed me was the extensive cocktail menu. Such an innovative expression of  old favourites reimagined by the talented mixologists at Reflections. I loved how the cocktails were grouped into different categories.

COAST

ELEVATE, FRESH, BRIGHT

Inspired by the crisp Pacific air, the shimmer of ocean waves, and the elegance of light, effortless flavours, Coast cocktails emphasize refreshing, clean, and airy compositions. With citrus, subtle florals, and delicate minerality, these drinks are a reflection of pure refinement and natural balance—whether served still or effervescent, each sip is a breeze of clarity and sophistication.

CASCADES

VIBRANT, LAYERED, EXPRESSIVE

An exploration of depth, texture, and contrast in flavour perception, the cocktails within Cascades are much like the ever-changing scenery of the Sea-to-Sky Highway at dusk. These drinks embrace layered and vibrant compositions that create a sense of movement and evolution on the palate. Whether it’s the interplay of fruit and acidity, unexpected textures, or a composition that shifts with each sip, these cocktails are an invitation to experience flavour as a dynamic and evolving sensation, rather than a singular note.

METROPOLIS

BOLD, ALLURING, COMPLEX

Capturing the energy, innovation, and indulgence of Vancouver’s urban core, Metropolis cocktails are bold and confident, with rich, spirit-driven profiles that demand attention. Depth, complexity, and a touch of decadence define this section— whether through umami elements, silky textures, or unexpected pairings, these cocktails are designed for those who appreciate the interplay of structure and sophistication in their glass. Each drink in this menu is placed by the way it feels, evolves, and resonates— creating a journey where guests can explore their own sensory preferences and emotional connections to flavour.

VISTA

LIGHT, REFINED, REFRESHING

Crafted with clarity and intention, these non-alcoholic cocktails offer a lighter take on flavour—refined, expressive, and quietly invigorating. Botanicals, extracts, and infusions unfold with balance and creativity, inviting a new perspective with every sip.

We opted to try three Small Plates to Share from the menu.

DUNGENESS CRAB TOSTADA

Macha Sauce, Avocado, Jalapeño, Lime

This dish was so delicious with generous portions of crab on a toasty, crisp Tostada shell.

BUTTERFLIED TIGER PRAWNS

Grilled, Harissa, Garlic, Dill, Lemon

Just look at the size of those succulent Tiger Prawns. This dish was spicey good.

LAMB KOFTA

Tzatziki, Mint, Pomegranate

This dish was chef’s choice and he was right; both good and filling. Loved the accompaniments, especially the crunchy Pomegranate seeds. Yum. I know I said “three” but Chef Shyam Longani insisted so we just couldn’t say no.

LOBSTER DUMPLINGS

Scallions, Cilantro, XO Broth, Crispy Shallots

Plump and luscious, but of course, Lobster!  Enough said.

We declined dessert, foolishly, with its decadent offerings.

Instead we enjoyed glasses of wine throughout the evening. I started with a glass of the Joie Noble Blend, something I haven’t had for sometime, this vintage differs considerably from my previous experiences from their original winemaker and from the Noble Blend that Heidi crafted. A much lighter, dryer expression.

Hubby chose a Rhone wine and stuck with that during the evening. While I opted to try a Chablis.

Both the Rhone red and the Chablis were excellent. The wine list is extensive and impressive.

If you’re wondering about the Everything Old Is New Again part, it’s because of the history of the Hotel Georgia, now the Rosewood Hotel Georgia, and it’s geographical location right in the middle of what once was the entertainment district. Once the home to places like the Dev Seafood House, the Cave Supper Club, Isy’s Supper Club. All in the area now known as Wasserman’s Beat. The Hotel Georgia is where people of colour, colourful characters and those turned away from the Hotel Vancouver stayed when visiting Vancouver. That included celebraties like Diana Ross and the Supremes.  Back in the day when Vancouver could never have been tagged “the no fun city”. Maybe Reflections is the start of something where Everything Old is really New Again.
