MICHELIN STAR FOR FIFTH CONSECUTIVE YEAR

Burdock & Co has retained its one Michelin star for the fifth consecutive year, the Michelin Guide announced this morning. The intimate, passionately sustainable Mount Pleasant restaurant received its first star when the Michelin Guide Vancouver launched in 2022. It was the first — and remains the only — Michelin-starred restaurant in Canada owned and operated by a female chef.
“We are grateful and proud to retain our Michelin star this year,” says chef-owner Andrea Carlson. “So many people contribute to what we do — our current and former team members, the farmers, fishers and foragers we work with and the guests who support us. It means so much to be part of the international Michelin family. I have deep respect for the Michelin Guide’s anonymous inspection process and its high standards.”
As executive chef-owner, Carlson leads the kitchen and is the creative force behind Burdock’s deeply personal, thematic menus. Her Moon Menus follow the micro seasons of the Pacific Northwest and continually expand the idea of what West Coast cuisine can be. She has built entire menus around Salt Spring Island citrus, forest resins, radicchio and flowers. Her Taste Sound dinner series with musician and biologist Tarun Nayar invited guests to taste plants while hearing their bioelectric activity translated into sound.
More recently, she has transformed overabundant sea urchin into uni gelato and chocolates, using unexpected pleasures to bring attention to the global loss of kelp forests and the urgent need for marine restoration.
The Michelin Guide inspectors praised Burdock & Co for its “rustic appeal” and Carlson’s “creative flair,” with “farm-to-table cooking” that highlights the best of the season: “Pine resin plates charcoal-grilled morels stuffed with pickled burdock and pine needles over edible flowers and crispy lichen for a memorable dish. Sablefish, glazed with fermented spruce bbq sauce is given a tableside pour of dashi broth. Finally, beeswax is served two ways, as an almond cake with koji beeswax butterscotch and a custard with pear sorbet and bee pollen.”
Burdock & Co is one of 11 Michelin-starred restaurants in Vancouver.

Burdock & Co, led by Andrea Carlson, was the first Canadian restaurant owned and operated by a female chef to win a Michelin star, which it has retained for five consecutive years.
