Papi’s Chef Max Straczek Pairs Talents with Fellow Top Chef Canada Contestants Mark Singson, Wallace Wong for One-Night-Only Collaborative Dinner at English Bay Restaurant

Papi’s Seafood and Oyster Bar Chef Max Straczek will share the spotlight with two fellow alumni of The Food Network Canada’s Top Chef Canada TV series when he welcomes Mark Singson and Wallace Wong to the line at the English Bay restaurant for a ‘Papi’s and Friends’ Collaborative Chefs Dinner on Saturday, October 5.

Beginning at 6 p.m., guests will enjoy a Prosecco welcome reception before sitting down for a dinner that will see the trio of chefs trade talents and courses during a culinary collaboration that showcases their respective styles. The menu includes such dishes as cauliflower panna cotta,truffle donut, mussel cannelloni, slow-cooked cod, congee with local seafood and ‘pumpkin latte’ dessert.

Singson, who earned his culinary chops at such local stops as The Fairmont Pacific Rim and Boneta before helping to open and lead AnnaLena to No. 6 on enRoute Magazine’s 2015 list of Canada’s Best New Restaurants, was the runner-up on the sixth season of Top Chef Canada in 2018. Straczek and Wong — both of whom honed their skills in Michelin-starred restaurants in Europe — shared the stage on the seventh season of the Food Network Canada TV series, with Wong finishing third overall.

Chef Straczek: Slow-Cooked Cod
lentil and chorizo ragu, celeriac purée, chicken jus, anchovy crumb

Chef Wong: Congee
local seafood, ginger, green onion

Chef Singson: ‘Pumpkin Latte’
coffee, pumpkin, dark chocolate

“I’ve been a fan of both of these chefs since before we all made appearances on Top Chef Canada, and I’m thrilled to share the kitchen with them,” says Straczek. “This time, there’s no ‘lights, camera, action’ — just the three of us doing what we love and sharing some of the inspiration that got us into cooking in the first place.”
