“In this series, I will be sharing my take on which Wines pair well with some inspirational recipes”
Two of my favourites are featured here; my interpretation of the Silver Palate cookbook Chicken Marbella and of course a bottle of Riesling.
In this case a Karp Schreiber off-dry Riesling that paired perfectly with the dish. The Karp Schreiber off-dry Riesling is available at BC Liquor Stores making it a go-to wine for Riesling lovers. Germany is reknown for their Rieslings and this one does not disappoint.
Karp Schreiber Riesling

This is what a Riesling should be. Intense notes of diesel are your first impression and I loved it. I always hope for this scent to mark the quality of a Riesling wine. To say this one didn’t disappoint is an understatement.
Pairing perfectly with the Chicken Marbella which is no easy feat given the ingredients in this dish. The tang of the capers, their juice, and the Spanish green olives juxtaposed with the sweetness of the dates. This was where the wine really shined without competing with the flavours of this dish.
Although off-dry, which is a Riesling I often favour, I did not find it to be sweet but with the correct balance to compliment the sweet and tangy sauce.
The wine is an excellent price point for serving often.

Chicken Marbella
- 1 tablespoon extra-virgin olive oil
- 6 bone-in, skin-on chicken thighs
- Kosher salt and freshly ground black pepper
- 2 garlic cloves, chopped
- ½ cup dates, sliced thin
- ½ cup pitted Spanish green olives, sliced
- ¼ cup drained capers, plus 1 tablespoon caper brine
- 3 dried bay leaves
- 1 tablespoon dried oregano
- 1 cup white wine
- ¼ cup red wine vinegar
Mix together the capers, brine, olives, red wine vinegar, bay leaves and oregano. Marinate the chicken with the mixture for a minimum of 30 minutes or overnight if you wish. You can either start this dish on the stove browning the chicken on both sides and finish in the oven, or bake it in the oven only. Add the white wine, pouring it around and not on top of the chicken, just before placing it in a 350 degree oven. You may broil the dish for a few minutes at the end if you wish. Top with any liquid and/or bits left in the pan. Serve with rice and vegetables. Please note the dates do break down quickly so you may want to reserve some for the end. Using dates means you do not need to add any sugar. About 20 minutes in the oven plus time under the broiler until golden brown.
This recipe always impresses but it is actually quite easy to make and it’s hard to go wrong. You may also use chicken breast or bonless/skinless chicken thighs in this recipe.
The carp’s no longer alone.
The carp is as much part of the Moselle river as it is an integral part of our coat of arms. This remarkable tradition began as far back as 1664 with fishermen who not only practised “Karp” (the Moselle Franconian word for “carp) fishing, but also viticulture. Around 1900, the Schreiber family joined the Karps through marriage and the Karp no longer had to swim alone, at least in name…
Today, Jobst-Julius Karp, the 13th generation of the family, manages this traditional wine estate. Having gained a degree in oenology and viticulture engineering from Geisenheim University, he toured the world of wine from California to New Zealand, from Australia to South Africa and then back to Spain to gain experience beyond the horizon of his home country.
