Kim Uncorked: Welcome to my weekly wine recommendation.

Hi, I’m Kim, a passionate lover of wine, food, and any experience that brings the two together! In this weekly blog post, I share my thoughts on a wine that I’ve recently purchased from one of our local independent wine merchants. If you’d like to know more about me, I’ve included a brief bio following the post.

French Rosé Wine

With the sun making an appearance in Vancouver this week, it felt like the perfect time to feature a rosé. After all, few things say summer quite like a glass of blushing wine enjoyed on the patio of one of Vancouver’s many restaurants.

AIX Rosé is a premium Provençal wine produced by Maison Saint Aix in the renowned Côteaux d’Aix-en-Provence appellation of southern France. Founded in 2009 by Dutch entrepreneur Eric Kurver, the estate spans 75 hectares of hillside vineyards northeast of Aix-en-Provence. The vineyards are planted primarily to Grenache, Syrah, and Cinsault, all thriving under the warm Mediterranean sunshine and cool Mistral winds. Limestone-rich soils help preserve freshness and add aromatic complexity in the grapes.

With its elegant pale-salmon hue, AIX Rosé is a classic dry blend offering vibrant aromas and flavours of wild strawberry, watermelon, white peach, and fresh citrus. Crisp acidity and a subtle saline minerality bring both freshness and sophistication, while the wine’s light body and silky finish make it gorgeously easy to sip on a warm summer day. Approachable and highly food-friendly, AIX pairs beautifully with Mediterranean dishes, seasonal salads, and fresh seafood.

For the best experience, serve well chilled between 8 and 12°C.
