Okanagan Wine Festivals – Spotlight Winery Bundle
The home base for TIME Family of Wines is at TIME Winery & Kitchen in Penticton, BC, where four of our storied BC wine labels live: the McWatters family legacy brand the McWatters Collection, Evolve Cellars, TIME Winery, and our newest label addition, Chronos.
The wines are made using grapes grown at various vineyards throughout the Okanagan Valley, where the unique terroir of the region allows complex flavours to develop, giving the wines a rich and authentic Okanagan taste. The winery team has leveraged its long-standing relationships with growers to access the best fruit for our family of wine brands.

The Spotlight wine bundle includes:
McWatters 2018 Meritage
Big, elegant, with soft tannins, well-balanced fruit, and oak characteristics with blackberry and cassis overtones.
Enjoy with grilled meats, roasts, rich tomato pasta, but best when shared with friends (new and old). It is ready to drink now but will continue to age gracefully through 2028.
The grapes for this wine are from Desert Valley, Adega, Haynes Creek Vineyard, and Gold Hill Vineyard. The grapes (Merlot 52%, Cabernet Sauvignon 25%, Cabernet Franc 21%, Malbec 2%) were carefully selected at the peak of ripeness and the wine was matured in French oak for 18 months.
Chronos 2020 Chardonnay

Winemaking
The 100% Chardonnay grapes were hand-sorted and whole bunch pressed. The wine was 100% stainless steel tank fermented and did not undergo malolactic conversion. The wine underwent weekly lees stirring for three weeks post ferment. The wine was not exposed to oak treatment. No fining
Tasting Notes
Colour: Light straw
Nose: Subtle pineapple, lemon
Palate: Apple, citrus, lime, peach, light-body, dry, stainless steel ferment, no oak
Chronos 2020 Rosé

Winemaking
The 100% Syrah grapes were sorted and de-stemmed into the press where the fruit was held for 5 hours before pressing was started. After pressing the juice was divided into two batches and fermented separately with different varietally enhancing yeast strains. Blended post ferment.
Tasting Notes
Colour: Confectionary pink
Nose: Candy notes, less pronounced aromas of white pepper
Palate: Dry, bright, light fruit-forward. Shows notes of red crunchy fruit, watermelon, strawberry, and raspberries
TIME 2018 Sauvignon Blanc
Vineyard
Silver Barrel Vineyard (Okanagan Falls)
Winemaking
Stainless fermented, then barrel-aged for 2 months in French oak.
Tasting Notes
Classic aromas circle in the glass: honeydew melon, pear, and a hint of tangerine. Taste hints of apricot and mango swirled with ripe gooseberry. This wine is mellowed by barrel ageing, resulting in a sturdy and vibrant finish with delicate traces of oak.

Evolve Pink Effervescence
70% Chardonnay, 28% Pinot Blanc, 2% Syrah
When the days feel too long, or when the good times aren’t long enough. The bubbles perfectly match a day in the sun, a meeting of happy minds and full hearts, and bubbles in baths. Pink Effervescence is the shining bright spot as the sun sets or wishing the day could last a bit longer.
Winemaking
Grapes were hand-sorted then whole bunch pressed. This wine is a blend of 70% Chardonnay and 28% Pinot Blanc. Fermented components separately with some lees stirring on the Pinot Blanc. Finished with 2% of Syrah to give the pink color.
Tasting Notes
Colour: Medium salmon
Nose: Strawberry, cherry
Palate: Raspberry, melon, light-body, dry
Food Pairings: Watermelon jalapeño and feta gazpacho, grilled cheese sandwiches, Seafood pasta.
Evolve 2018 Momento

47% Merlot, 46% Cabernet Franc, 7% Syrah
This approachable wine is a blend of 47% Cabernet Franc, 46% Merlot, and 7% Syrah; aged separately in American and French oak for 14 months before being blended. Moments are
created when we share in great wine and great friends.
Winemaking
A blend of 47% Cabernet Franc, 46% Merlot and 7% Syrah. Each wine is aged separately in American and French oak for 14 months before being blended. Each of these wines received daily pump-overs with the Cabernet Franc receiving a post ferment maceration to help soften tannins.
Tasting Notes
Colour: Medium ruby
Nose: Blackberry, vanilla
Palate: Red berries, cedar, rich, robust, medium body, dry
Food Pairings: Roast chicken, Sausage casserole, Bolognese pasta
