I enjoyed the Vasanti Cabernet Franc last week, taking advantage of the stormy weather to pair this wine with comfort food. I was not disappointed. If this is what the winter has in store I’m all in. A wine that stands up to both the old standards and dishes with more flair should be on your must try list.

Don’t get me wrong this is such a delicious and versatile wine it’s ideal year round, not just for chilly nights. Think hearty soups or Roast Beef dinner with Yorkshire pudding or summer evenings with BBQ short ribs. That’s another pairing I’m anxious to try one of the Vasanti wines with – Beef Short Ribs, but that’s for a day in the not too distant future, today I’m focusing on this young, but totally drinkable now, wine you really must try, Vasanti Cabernet Franc.

Wine Profile

Vineyard Notes

  • 100% of these grapes come from the East Bench block at Monarch Vineyards in Osoyoos, B.C.
  • Deep sand runs throughout, encouraging plant stress, while the lake helps balance the nighttime temperatures. Granite is intermingled with the sand, adding mineral depth.
  • Perfect for cultivating high-quality Cabernet Franc grapes.

This is a young, but bold, wine. For those too impatient to cellar this fine wine I say go for it! You will not be disappointed. Rich aromas of ripe berries mingle with leather and tobacco scents. There is nothing subtle here this is a wine to savour with substantial dishes to bring the deep flavour tones to the fore.

I could not have picked a better wine to go with the dish. Again, a dish featusing seasonal squashA bit different than you might expect seeing this wine is just made to pair with something more hearty, like a French onion soup. But the Cabernet Franc was so right with the sweet, caramelized squash, the tangy fresh Basil leaves and the aged Parmesan cheese topping.

The ripe fruit on the nose was followed by a rewardingly delicious richness on the palate. Velvetly smooth with very light tannins. I loved the hints of black pepper that lingered in the mouth, enveloped superbly in a finish of spice.
