Our winemaker Benoit employs several techniques in the winery with our Noble Knights Chardonnay, not regularly utilized for the Stony Knoll or our Reserve Chardonnays.
This includes barrel fermentation, malolactic fermentation (process by which malic acid is converted into lactic acid and carbon dioxide), and batonnage (French term for stirring wine lees).
These techniques add to the wonderful fruit flavours of our Noble Knight Chardonnay by adding silky textures and more structure and weight.

2020 RESERVE PINOT GRIGIO
Flavours reminiscent of orange slices, orchard fruit, and tropical melon. The fruit is elevated by the refreshing and balanced acidity with a lingering finish.

Deeply complex and bold, intense wild blue and black fruits with hints of floral. These notes are followed through on the palate along with rich earth and spice notes leading to a long lingering finish.
