L’Abattoir and Savour the Wild collaborate for a one-night-only
Pacific Northwest feast: September 21
On the eve of the premiere of Savoured Here, Savour the Wild’s TELUS STORYHIVE-backed documentary series, Executive Chef Jasper Cruickshank, Chef Colton Armstrong-Ashley, and Bar Manager Alexa Gervais come together for an intimate ten-seat tasting menu inspired by the people, places, and ingredients of the region
The flavours and stories of the Pacific Northwest will take centre stage this September when Gastown’s Michelin-recommended L’Abattoir partners with Savour the Wild, the Pacific Northwest culinary experience and creators of the TELUS STORYHIVE-backed documentary series Savoured Here for an intimate, one-night-only dining experience on Monday, September 21 at 7:30 pm.
The evening will bring the world of Savoured Here off the screen and onto the table ahead of the series’ September 22 premiere on TELUS Optik TV and TELUS Stream+. Created by Chef Colton Armstrong-Ashley and Creative Director Saman Rezapour, the six-part series will inspire a collaborative multi-course tasting menu from L’Abattoir Executive Chef Jasper Cruickshank, Savour the Wild Co-founder and Savoured Here host Chef Colton Armstrong-Ashley, and Bar Manager Alexa Gervais, drawing on the landscapes, producers and culinary stories explored throughout the series.
Chef Jasper and Chef Colton will showcase foraged ingredients from both land and sea, including geoduck, wild mushrooms, bull kelp, ramps and sea asparagus. Complementing each course, Alexa will create a series of original cocktails featuring Empress 1908 Gin and Maison Perrier, inspired by seasonal botanicals and coastal flavours.
The evening begins at L’Abattoir’s bar before moving into the restaurant’s glass-enclosed Atrium for the final courses and dessert. Throughout the dinner, Jasper, Colton and Alexa will share the inspiration behind their dishes, cocktails and pairings, offering guests an intimate look at the creative process behind the collaboration.
Menu highlights include Albacore Tuna Tataki with bull kelp and onion dashi; Charcoal-Grilled Octopus with mushroom BBQ glaze and sea-forage gremolata; Parisian Gnocchi with lion’s mane mushrooms, preserved ramps and beurre blanc; and Preserved Peaches with crème fraîche, Chartreuse and fig-leaf granita.
With just 10 seats available, the dinner is a rare opportunity to experience three celebrated culinary talents from Vancouver and Vancouver Island as they interpret the flavours and stories of the Pacific Northwest in a highly intimate setting.
