Chef Adair Scott Leads New Team at Terrafina Restaurant
Hester Creek Integrates Restaurant Operations Within Winery Estate
Terrafina Restaurant at Hester Creek Estate Winery is reopening for the season on March 4, under the new direct management of Hester Creek. The Restaurant will be led by a talented new team — executive chef Adair Scott and Paul Henbury, Restaurant Manager.
Meaning “from the earth” Terrafina is a gorgeous Tuscan style restaurant nestled among the vines of Hester Creek’s Mediterranean-influenced grounds. Terrafina captures the true essence of the Okanagan, from the abundant local fruit and produce, to the extensive varietals of the estate’s historic vineyards, the restaurant brings the best of the seasons to the table. Terrafina is reopening this spring with a fresh, seasonal menu designed by Chef Scott that is a regionally sourced, modern take on Tuscan inspired cuisine.
“I grew up on a small farm and feel there’s a huge responsibility to respect the bounty of the South Okanagan. There’s such a fantastic variety of wild treats, artisan farmers, and amazing wine here. The whole valley is based on food — agriculture and wine — and our regional cuisine creates the opportunity for incredible experiences, relationships, and stories,” said Adair Scott, executive chef, Terrafina Restaurant. “At Terrafina, I get to work closely with the local producers and our winemaker and taste with them the fresh produce and wine. It’s this storytelling that you’re able to do tableside, that creates the best dinner table experiences.”
Adair Scott joins Hester Creek from Watermark Beach Resort in Osoyoos, where as their executive chef for the past 7 years he received numerous honours for his innovative approach to fresh, healthy, local cooking. Growing up in northern BC, he developed a lifelong passion for locally sourced food, learning at an early age how to raise livestock and tend a large garden on his family’s farm in Prince George. Early in his career he honed his culinary skills with stints at the Harvest Golf Club and Local Lounge & Grille in the Okanagan and developed international experience at kitchens across Australia, with the highlight as Chef de Partie at Australia’s landmark restaurant Stokehouse, famed for their “beach luxe” dining and seafood. At Terrafina, Scott brings his love of local fare and considerable network of family farms and artisan suppliers to a new terroir-to-table based, Tuscan inspired menu.
Paul Henbury has over two decades in hospitality along with an extensive background in music. He got his start in a culinary career working at Montreal’s famed grand hotel, Fairmont Le Reine Elizabeth. A move to Tofino and the renowned Relais & Châteaux destination resort, Wickaninnish Inn & The Pointe Restaurant, soon brought a passion for BC wine. Relocating to wine country, saw him at Red Rooster Winery and Sumac Ridge Estate Winery as maître d’ and wine steward. Paul’s intertwined passion for music, wine and hospitality had him first perform at Hester Creek as a musician in 2012, followed by assisting in service with the winery’s many special events. At Terrafina, Henbury brings a considerable background in fine dining, entertainment, and hospitality to the guest experience.

Terrafina Restaurant is reopening March 4 from Wednesday to Sunday with a lunch, happy hour and dinner menu, along with a weekend brunch offering. Starting in May the restaurant will be open 7 days a week. More details are available at terrafinarestaurant.com.
