COQUILLE FINE SEAFOOD CELEBRATES WORLD OCEANS DAY WITH A CONTRIBUTION TO OCEAN WISE
Now into well into their second year of operation, Coquille Fine Seafood, located within view of the Pacific Ocean, is raising funds on World Ocean Day for Ocean Wise. With a seafood and shellfish focused menu, the importance of conserving the oceans and their bounty is of paramount importance to this Gastown restaurant.
Chef and co-owner, Lee Cooper and his culinary team know the importance of sustainable choices when it comes to their suppliers. “We’re an Ocean Wise partner and we rely on the important work that they do to provide us with up to date information so that we can offer our guests sustainable choices” says Cooper of their partnership with Ocean Wise.
Coquille is honouring Ocean Wise on World Oceans Day by donating one dollar from every Ocean Affairs feature cocktail and every Spot Prawn feature sold on Saturday June 8th.
Robert Clough, Bar Manager at Coquille, has crafted the Ocean Affairs cocktail for the occasion and will be at the bar this Saturday shaking up the fundraising libation. The feature cocktail is made with Sheringhams Akvavit, Seaweed Sake, Green Tea Honey, Cardamom & Celery Bitters.
At the other end of the bar, guests will find Chef de Cuisine, Chris Janowski working with the culinary team on a feature using a BC favourite and Ocean Wise product, Spot Prawns. The feature diners can enjoy this Saturday is Spot prawns with charred tomatillo, and crispy eggplant.
The team at Coquille Fine Seafood are looking forward to contributing to a sustainable future on World Oceans Day this Saturday.
