Haywire offers pure, lively, wines that reflect the unique cool climate terroir of  Canada’s Okanagan Valley. Founded in 2009, “haywire” is an old Canadianism that refers to the wire used for baling hay.

The pork dumplings and the soup broth were both flavoured with ginger which could have presented a challenge if the wine had not been just right. The Brewer Clifton Santa Rita Hills Chardonnay was a standout with this dish.

The winery was asked to pick just one wine that could be featured. The wine had to be just that little extra bit special and viola the wine was chosen.

“The road to a friend’s house is never long.” This is especially true when the purpose of the visit is to discover the secrets of a new wine. This is the first of four wines from il Molino di Grace.

For this dish I spent some time choosing the wine pairing, and no wonder, try Googling Spanakopita and the suggestions run from Sauvignon Blanc to a Beaujlais. I think I found the perfect balance with the Stag’s Hollow Pinot Noir.
