As a new convert to this delicately flavoured fish it is fast becoming one of my favourite dishes. Seared, baked or steamed this fish keeps it’s firm texture and retains its moistness. Delicious no matter how it’s prepared or served.
This recipe courtesy of Provence Marinaside from their August Winery Menu featuring the wines of Clos du Soleil. It sounds absolutely delicious and with another wave of hot temperatures it makes the perfect dish.
Here is my interpretation of the recipe (you can find the original at NYTCooking.com). As usual I take great liberties with the recipe, this time mainly by adding a few ingredients and leaving a few off.
